Roasted Spicy Sweet Potatoes

Ingredients

3 large sweet potatoes, peeled, cubed

2 tablespoons olive oil

2 teaspoons cinnamon

1 teaspoon all-spice

1 teaspoon salt

1/8 teaspoon cayenne pepper

Directions

Peel the potatoes and cube them about the same size so they will all cook evenly.

Place the cubed sweet potatoes onto a full size sheet pan.

Drizzle the olive oil over the potatoes, and toss together to cover them well.

In a small mixing bowl, stir together the cinnamon, all-spice, salt and cayenne.

Sprinkle the spice mix over the sweet potatoes then toss them, making sure they are covered with spice and oil.

Roast in the oven at 425 degrees for about 25 to 30 minutes.

Remove from the oven and cool on a cooling rack for at least 10 minutes.

Serve warm.

If you are freezing bring the potatoes to room temperature, then refrigerate for 2 hours, then bag in a freezer bag, freeze up to 3 months.
