Slow Cooker Cheesy Potato Soup

Ingredients

1/2 lb bacon

1 bag Frozen Southern Style Hash Brown Potatoes

3 cans chicken broth

1 can cream of chicken soup

2 cloves garlic, minced

1 medium yellow onion, chopped

1 bunch green onions, chopped

1 8 ounce package cream cheese, softened

Dash cayenne pepper to taste

Salt and Pepper to taste

Directions

In a medium size skillet fry 1/2 pound bacon until crisp, reserve the rendered fat and drain the crisp bacon on a paper towel

Saute the chopped yellow onion in the bacon fat, remove the onion and reserve the remaining fat

In a mixing bowl mix the chicken broth and chicken soup until blended well

In a large 6 QT Slow Cooker, combine the hash browns, 1/2 of the crisp bacon, the sauteed onions, minced garlic, and 1 tablespoon of the rendered bacon fat, mix well

Add the chicken broth and chicken soup mix , cayenne pepper, salt and pepper, mix well

Cook in the Slow Cooker on low for 4 1/2 hours

Add the softened cream cheese and mix well

Continue to cook on low for another 30 minutes

Keep on warm until ready to serve

Garnish with the chopped green onions and remaining crisp bacon
