Texas Style Chili

Ingredients

3 pounds beef sirloin, cubed

4 tablespoons vegetable oil

2 medium yellow onions, chopped

3 garlic pods, minced

1- 6 ounce can tomato paste

2 tablespoons Pasilla Chili powder (see recipe tips)

2 teaspoons Ancho Chili powder

1 tablespoon ground cumin

1 teaspoon oregano

1 teaspoon salt

1 teaspoon black pepper

1/2 teaspoon cayenne pepper

2 cups water or 2 cups beer

Directions

In a small mixing bowl mix the, chili powders cumin, oregano, salt, and peppers.

In a heavy dutch oven, heat the vegetable oil and brown the cubed sirloin.

Add the onions and cook until the onions are clear.

Add the tomato paste and mix until it is fully incorporated.

Add the seasons mix and stir well making sure the meat does not scorch.

Add the water or beer stirring to mix well.

If you want the mixture to be thinner just add more water or beer.

If you want it to be thicker just add 4 tablespoons Masa Harina. (see recipe tips).

Reduce the heat and simmer for 2 to 3 hours until the meat is very tender.

Recipe Tip

Masa Harina

If you don't have Masa Harina, just tear 3 corn tortillas in small pieces and put them into the chili, then stir until the tortillas have melted into the chili, then they will thicken the chili.

Pasilla Chili Powder

Can be substituted for regular Chili Powder

Garnish with fresh green onions, longhorn or sharp cheddar cheese.

Some Texans like a little lime on the side.
