Fresh Strawberry Scones

Ingredients

2 cups fresh strawberries, diced

2-1/2 cups all purpose flour

3 tablespoons sugar

1 tablespoon baking powder

dash salt

1/2 cup butter, ice cold, small cubes

2 eggs, lightly beaten

1/2 cup half and half

Sparkling sugar

Mint for garnish

Directions

Wash, clean and dice the strawberries, then set aside.

In a large mixing bowl, whisk together the flour, 3 tablespoons sugar, baking powder and salt.

Add the ice cold butter cubes to the flour mixture, the cut the butter into the flour with a pastry blender until the mixture looks like large crumbles.

In a mixing pitcher, whisk the eggs with the half and half.

Make a deep hole in the center of the flour mixture and pour the liquid mix into the hole.

Pour the diced strawberries on top of the liquid mixture.

With a large spoon begin to gather the dough together. The dough will be very sticky.

Place parchment paper on top of a baking sheet and sprinkle some flour in the center.

Gather the dough together and place it in the center of the parchment paper with the sprinkled flour.

Work the dough into a 9 inch circle about 3/4 of an inch to 1 inch height.

After your dough is formed into your circle, cut into 8 slices with a very sharp knife.

Generously sprinkle Sparkling sugar all over the top of the scones.

Bake in a 400 degree oven for 18 to 20 minutes, until golden brown.

Garnish with fresh mint.

Serve with sour cream, whipped cream or ice cream with fresh strawberries on top.
