Chicken Soup

Ingredients

1 whole Chicken

3 Celery Stalks with tops, chopped

2 Carrots, chopped

1 medium yellow onion, chopped

1 1/2 tablespoons poultry seasoning

1 tablespoon thyme leaves

salt and Pepper to taste

Directions

Wash the chicken and place in a very large stock pot with the celery,carrots, onion, and seasons

Cover with water leaving about 2 inches about the chicken

Cook on medium heat until chicken is tender, about 45 minutes to an hour

Remove Chicken and all the vegetables leaving the broth in the stock pot.

De bone the Chicken and chop the meat

For Soup

Add the chicken back to the broth in the stock pot

Add 3 stalks of celery, sliced thick on the diagonal

3 carrots, chopped in medium chop

2 cups green peas

Adjust the seasons

Cook on medium until the vegetables are tender

For Chicken Noodle Soup

Add 1 large package of noodles to the above Soup mixture and cook 10 minutes until noodles are done

Adjust the seasons
