Very Berry Ice Cream

Ingredients

2 cups mixed fresh berries

1 (14 ounce) can sweetened condensed milk

pinch salt

2 cups heavy whipping cream

2 teaspoons vanilla

1-1/2 cups strawberry preserves

Directions

Pour the condensed milk into a medium mixing bowl.

Add the cleaned and washed berries.

Add a dash of salt and the vanilla then mix together, making sure that all the berries are covered well.

Whip the whipping cream with an electric mixer to firm peaks.

Very gently fold the whipping cream into the berry mixture.

Gently stir the strawberry preserves into the mixture.

Pour the mixture into a 9 X 5 X 3 loaf pan, then smooth the top.

Cover the pan with plastic and place in the freezer. Freeze for at least 8 hours and it is better if you can leave it overnight.
