Fried Cabbage With Bacon & Smoked Sausage

Ingredients

1 small head of cabbage, shredded & chopped

8 slices bacon, chopped

1 medium onion, chopped

2 teaspoons salt

1 teaspoon pepper

2/3 cup Red Wine Vinegar

1/3 cup water

Optional 2 dashes Tabasco

For The Additional Smoked Sausage

1-1/2 pounds smoked sausage, chopped

Directions

Chop and Shred the cabbage then set aside.

In a very large skillet, sauté the bacon and onion until the onion is clear.

Add the shredded & chopped cabbage, mix with the bacon and onion.

Add the salt and pepper, mix well.

Add the Red Wine Vinegar, water and optional Tabasco.

Cook on medium heat until cabbage is tender.

Remove your fried cabbage to a serving dish.

For The Smoked Sausage Option

In the same skillet with the juices of the cabbage, brown the smoked sausage, then add it to the cabbage, and toss.

If you would like you can serve the smoked sausage on the side, it has a wonderful flavor cooked in the cabbage juices.
