Old Fashioned Oatmeal Cranberry Cookies

Makes 28 Cookies

Ingredients

1 cup butter, soften

1 cup brown sugar

1/4 cup granulated sugar

2 large eggs, room temperature

3 teaspoons vanilla extract

1 tablespoon molasses

1-1/2 cups all purpose flour

1 teaspoon baking soda

1 teaspoons ground cinnamon

dash salt

3 cups whole rolled oats

1 cup dried fruit (I used dried cranberries for this recipe)

1 cup chopped nuts (I used pecans, chopped for this recipe)

Directions

In a electric mixing bowl, cream the butter and sugars until smooth and creamy.

Add the eggs one at a time and mix at least one minute.

Add the vanilla and molasses continue to mix until completely combined.

In a mixing pitcher or bowl, stir together the flour, baking soda, cinnamon and salt.

Add the dry ingredients into the wet ingredients a little at a time and mix on low until it is completely combined.

Beat in the oats, dried fruit and nuts, and continue to mix until combined. This is a very thick dough.

Cover the mixing bowl and place in the refrigerator until chilled, allow the cookies to be chilled at least one hour.

Scoop the cookie balls on to a parchment lined cookie sheet.

Bake at 350 degrees for 12 to 14 minutes until lightly browned on the edge.

Remove from the oven and place the cookies on a cooling rack for at least 10 minutes before serving. (We all know no one can really do that, enjoy your cookie)!
