Pumpkin Cake

Ingredients

The Cake

1 Yellow Cake Mix, (15.25 ounce box)

1 (15 ounce) can Pumpkin Puree

2 eggs

3 tablespoon vegetable oil

1 teaspoon cinnamon

1 teaspoon all spice

4 teaspoons pumpkin pie spice

drops of yellow and red food color

Baking flour and oil spray

The Frosting

1 cup butter, softened

4-1/2 cups Powdered Sugar

1 cup Pumpkin Puree

2 teaspoons Pumpkin pie spice

drops of yellow and red food color

1 cup chopped pecans

Directions

Mix the cake mix, eggs, vegetable oil, pumpkin puree,(reserving 1 cup for the frosting) cinnamon, all spice, and pumpkin pie spice. Mix in a large bowl until mixed well.

Add the drops of food color and blend until the color is right for you.

Pour into a sprayed 9X13 baking pan.

Bake at 350 degrees for 30 to 35 minutes.

Remove the cake from the oven and let it cool completely.

The Frosting

In a medium mixing bowl whip the butter until very smooth.

Add the pumpkin puree (reserved from the cake) and the pumpkin spice.

Add the food color and mix to your desired color.

Add the powdered sugar a cup at a time and mix well.

Continue to add and mix the powdered sugar until the frosting is right for you.

Frost the cake and garnish with chopped pecans.
