Irish Brown Bread Pudding

Ingredients

8 to 10 cups of Irish Brown Bread, cubed *

8 eggs, beaten

1-1/2 cup half and half

1/2 cup brown sugar

2 teaspoons cinnamon

1 teaspoon all-spice

1 teaspoon vanilla extract

1/2 teaspoon salt

2 tablespoons butter

Sauce

1/4 cup butter

1/2 cup powdered sugar

1/2 cup heavy cream

Directions

Chop the bread and place it in a bowl, set aside.

In a large mixing pitcher, mix the eggs, half and half, brown sugar, cinnamon, all-spice, salt and vanilla extract.

Butter a 9 X 13 baking dish and place the bread cubes into the baking dish.

Very slowing pour the liquid mix over the bread, waiting so the liquid can be absorbed, try not to push the bread down, just let it absorb.

Let the bread mixture sit for 45 minutes.

Place in a 375 degree oven and back for 40 to 45 minutes until browned on top and almost set in the center.

Remove from the oven onto a cooling rack.

Sauce

In a small sauce pan, mix together the butter, powdered sugar and heavy cream.

Bring the mixture to a boil and boil for 1 minute.

Remove from heat and let sit until cooled.

Pour 1/2 over the top of the pudding, reserving 1/2 to serve on the side.

Best served when warm.

*A regular Irish Soda Bread may be substituted for the Brown Bread.
