Grilled Chicken With Garden Relish

Ingredients

For The Chicken

6 chicken breast, boneless and skinless

Marinate

1/2 cup white-wine vinegar

1/2 cup water

2 cloves garlic, minced

1 teaspoon sugar

1 teaspoon salt

1 teaspoon pepper

1 teaspoon cayenne

For The Relish

2 cups cucumber, peeled and chopped

4 cups heirloom cherry tomatoes, sliced

1 red onion, chopped

6 radishes, sliced

1 medium jalapeno, seeded, diced

1 cup mint, chopped

Vinaigrette

1/2 cup white-wine vinegar

1/2 cup olive oil

1 clove garlic, minced

1 teaspoon thyme

1 teaspoon sugar

1 teaspoon salt

1 teaspoon pepper

pinch pepper flakes

Directions

For The Marinate

In a mixing jar, mix the vinegar, water, garlic, sugar, salt, pepper and cayenne together.

Place the chicken into a glass container, and pour the marinate over the chicken making sure the chicken is covered on both sides.

Refrigerate for at least 2 hours.

The Garden Relish Vinaigrette

In a small sauce pan stir together the vinegar, garlic, thyme, sugar, salt, pepper and pepper flakes.

Heat the vinaigrette mixture until it comes to a boil. Remove from the heat and cool to room temperature.

Pour the mixture into a mixing jar and add the olive oil, then shake to mix well.

Set aside and keep at room temperature.

The Garden Relish

Prepare all the garden vegetables and place into a large mixing bowl.

Pour the Vinaigrette over the vegetables and cover the mixing bowl.

Refrigerate for at least 1 to 2 hours.

Lets Put All This Together

Grill the chicken on a medium grill about 6 to 7 minutes on each side.

Remove the chicken to a serving platter and top with the garden relish.

Serve the remainder of the garden relish on the side.
