French Cassoulet Texas Style

Ingredients

1 pound Great Northern White Beans

1 pound smoked sausage, sliced

1 yellow onion, chopped

1 green bell pepper, chopped

1 red bell pepper, chopped

4 cloves garlic, chopped

4 slices thick cut bacon, chopped or

1 small piece of salt pork

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

1 teaspoon parsley

1 teaspoon salt

1 teaspoon pepper

1/8 teaspoon cayenne pepper

Directions

Rinse and sort beans in a large pot.

To 1 pounds of beans add 8 cups hot water. Bring to a rapid boil, and boil for 2 minutes.

Remove from heat

Cover and let stand 1 hour, drain and rinse beans.

While the beans are draining, in the cooking pot, cook the chopped bacon and render the fat.

Add the chopped onions, peppers and garlic saute until the onions are clear.

Add the slice sausage and blend well.

Pour the drained and rinsed beans back into the pot.

Add the chopped rosemary, thyme, parsley, salt, pepper, cayenne pepper and mix well.

Add 6 cups of water and stir

Bring to boil and cover, reduce the heat to low and cook for 1 1/2 hours or until the beans are tender.

Tip: Be sure and watch the water level, so you don't let your beans cook dry and burn or stick to the bottom of the pan.
