Black Eyed Pea Salad

Ingredients
Vegetables
3 cups cooked and cooled black eyed peas
1 cup whole kernel corn
1 medium onion, chopped
1 cup green bell pepper, chopped
1 cup red bell pepper, chopped
1 cup tomato, chopped
1 cup cucumber, seeded and chopped
(Optional) 1 jalapeno, seeded and chopped
Dressing
1/2 cup salad oil
1/4 cup white wine vinegar
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon pepper
1 tablespoon sugar
1 dash cayenne pepper
Directions
Chop all the vegetables and place in a very large mixing bowl, set aside while you mix the dressing.
In a mixing jar, pour in the salad oil, vinegar, garlic powder, salt, pepper, sugar, and cayenne. Cover the jar and shake until the mixture looks creamy.
Pour over the vegetables and mix well.
Refrigerate for 2 hours before serving.
