Sirloin Tips On Rice

Ingredients

2 pounds sirloin steak, chopped

1 teaspoon salt

1 teaspoon pepper

3 tablespoon olive oil

1 large onion, chopped

4 stalks celery, chopped

4 cups beef broth

1 tablespoon beef stock paste

1/2 cup flour

1 cup half and half

1 teaspoon salt

1 teaspoon pepper

1/8 teaspoon cayenne pepper

1 teaspoon thyme

Garnish fresh parsley

Directions

Place the sirloin tips into a large mixing bowl, pour 1 tablespoon of the oil on the sirloin, then add the salt and pepper. Mix very well until each piece is covered with the seasons and oil.

In a heated heavy stock pot add the remainder of the oil. Place the seasoned sirloin tips into the hot oil and cook the tips until they are browned on all sides.

Add the chopped onions and chopped celery, cook until the onions are clear.

Pour in the beef stock and cook the sirloin tips until tender, about 30 to 45 minutes.

When the tips are tender, add the beef stock paste and mix with the broth well.

In a mixing jar, add the flour,salt, pepper, cayenne pepper, thyme and half and half. Place a lid on the mixing jar and shake until the mix is smooth.

Pour the flour and half and half mixture into the beef stock and tips. Stir until the liquid starts to thicken, then lower the heat. Let the mixture simmer until ready to serve.

Serve on cooked rice, mashed potatoes or noodles.

Garnish with parsley
