Mixed Berry Cobbler

Ingredients

Serves 4 to 6

3 cups fresh strawberries, washed and quartered

3 cups fresh blackberries, washed and left whole

3 cups fresh blueberries, washed and left whole

1 cup plus 4 tablespoons granulated sugar

1 teaspoon cinnamon

1/3 cup cornstarch

2 tablespoons lemon juice

1 cup flour

1-1/2 teaspoon baking powder

1/2 teaspoon salt

3 tablespoons unsalted butter, cold and cut in cubes

2/3 cups whole milk

6 tablespoons sparkling sugar

Directions

Place the strawberries, blackberries, and blueberries in a large mixing bowl.

Mix 1 cup sugar, cinnamon and cornstarch together.

Sprinkle the sugar mixture over the berries and toss making sure all the berries are covered.

Sprinkle the lemon juice over the berries and mix well.

Pour the berries into a 8 by 11 baking dish.

Bake the berries mixture for 10 minutes at 375 degrees.

While the berries are baking, make the biscuit dough.

In a medium mixing bowl, shift together, the flour, baking powder, salt and the remaining 4 tablespoons of sugar.

Add the cold butter cubes.

With a pastry blender or 2 forks, cut the butter into the flour mix until it is crumbly.

Stir in the milk until the dough come together, try not to over mix at this point.

When the fruit has baked for 10 minutes, remove it from the oven and drop the biscuits on top of the fruit. I find it easier to use a scoop for dropping the biscuits on top.

Sprinkle the biscuits with Sparkling sugar.

Bake in a 375 degree oven for 35 to 40 minutes or until the fruit in bubbling and the biscuits are turning brown on top.

Remove from the oven and let cool just a few minutes.

Serve warm or cold.
