Vintage Pecan Sandies

Makes 5 Dozen

Ingredients

2 cups butter, softened

1 cup confectioners' sugar for batter

2 tablespoons water

4 teaspoons vanilla extract

4 cups all-purpose flour

2 cups chopped pecans

1/2 cup confectioners' sugar for dusting the cookies

Directions

In a large electric mixer bowl, cream the butter and sugar until creamy.

Add the water and vanilla then mix well.

While the mixer is going add the flour 1/2 cup at a time until all the flour is incorporated.

Fold in the chopped pecans.

Using a scoop for a tablespoon, scoop the dough then roll to make it smooth.

Place the cookie balls on a cookie sheet.

Gently press the cookie ball down with your fingers.

Bake in a 300 degree oven for 30 to 35 minutes or until the edges are turning brown.

Cool completely on a wire race.

When the cookies are completely cool, dust the cookies with the confectioners' sugar.

Store in a covered container.
