Veggie Burger Soup

Ingredients

1 teaspoon vegetable oil

1-1/2 Ground Chuck

2 yellow onions, chopped

3 cloves garlic, minced

32 (ounces) beef broth

1 (16 ounce) frozen soup vegetables

3 cups fresh cabbage, chopped

1 teaspoons salt

1 teaspoon seasoned salt

1 teaspoon pepper

1/2 teaspoon Tabasco Sauce

1-1/2 teaspoon Italian Seasoning

1 teaspoon Worchestshire Sauce

1 cup Ketchup

Option: Cooked Rice

Directions

In a very heavy stew pan or dutch oven, heat the vegetable oil.

Sear and brown the ground chuck.

Add the chopped onions and minced garlic and cook until the onions are clear.

Add the beef broth and stir well deglazing the bottom of the pan.

When the beef broth is hot add the frozen soup vegetables and stir until all the vegetables are covered. Cook until the vegetables are just beginning to defrost.

Add the fresh cabbage and put the lid on the pan and let it cook on low until the cabbage is wilted about 10 to 15 minutes.

Remove the lid and add the salt's, pepper, Tabasco Sauce, Italian Seasoning, Worchestshire Sauce and Ketchup. Stir very well. then place the lid on the pan.

Cook on low for 45 minutes to 1 hour, then keep on simmer until ready to serve.

Recipe Option: Cooked rice can be added to the soup for serving.
