Sweet and Sour Cabbage with Smoked Sausage

Ingredients

1 tablespoon olive oil

1 pound smoked sausage, sliced

4 tablespoons butter

1 medium red delicious apple, medium slice with peeling on

1 medium gala apple, medium slice with peeling on

1 large yellow onion, large chop

4 cups purple cabbage, large chop

4 cups green cabbage, large chop

1 cup apple juice

1/4 cup apple cider vinegar

1 tablespoon balsamic vinegar

1/4 cup brown sugar

1 teaspoon salt

1 teaspoon pepper

1/8 teaspoon cayenne pepper

Directions

In a heavy sauce pot, heat the olive oil and brown the smoked sausage, then remove the sausage to a plate to rest.

Add the butter to the sauce pot, then saute the apple and onion until the onion is clear and the apple is just turning light brown on the edge.

Add the cabbage and cook until the cabbage is wilted.

Add the smoked sausage back into the sauce pot with the cabbage and stir well.

In a mixing pitcher, add the apple juice, vinegar's, sugar, salt and peppers, mix well.

Pour the apple juice mix over the cabbage mix and stir well.

Cover the sauce pot and cook until the cabbage is tender, about 20 minutes.

Serve with or over potatoes or noodles. It is really great without any sides!
