Miz Helen's Kitchen

Ingredients

3 to 5 pounds St. Louis Style Ribs

For The Rub

1/4 cup yellow mustard

1 cup dark brown sugar

3/4 cup white sugar

1/2 cup smoked paprika

2 tablespoons chili powder

1 tablespoon cumin

2 teaspoons coriander

4 tablespoons onion powder

4 tablespoons garlic powder

2 tablespoons salt

1 tablespoon pepper

1/2 teaspoon cayenne

Directions

Mix all the dry ingredients together and set aside.

Wash the ribs and pat dry.

Brush the mustard on all side of the ribs.

Generously cover the ribs on all sides with the rub, patting down to ensure that it sticks well.

Place the ribs on heavy foil paper and wrap tight, making sure it is sealed.

Place the wrapped ribs on a shallow baking dish and bake in a 375 degree oven for 1 hour and 45 minutes.

For Out Door Grill

Remove the ribs from the foil, discard the liquid.

Place the ribs on the grill over medium heat for about 15 minutes, turning only once.

Baste the ribs with your favorite Bar-B-Que sauce.

Remove from the grill and let rest for 10 minutes before serving.

Finish In The Oven

Remove the ribs from the foil, discard the liquid.

Place the ribs back on the baking dish and baste with the Bar-B-Que sauce.

Return to oven and leaving the oven rack in the same baking position, broil the ribs until browned. Be sure and watch this method very carefully so the ribs don't burn.

Remove from the oven and let rest for 10 minutes before serving.
