Southwest Chalupa

4 to 6 Corn or Flour Tortilla's

1 pound ground lean beef, chicken or turkey (optional)

1 cup roasted corn or plain corn, cut from the cob

1 cup black bean, drained

1 medium onion, chopped

1/2 cup green bell pepper chopped

1/2 cup red bell pepper chopped

1 cup Green Chilis, chopped

2 cloves garlic, minced

1 teaspoon salt

1 teaspoon pepper

3/4 teaspoon Chipotle chile powder

1/2 teaspoon cumin powder

2 cups Longhorn or Sharp Cheddar Cheese, Shredded

Lettuce and Tomato Toss

Mexican Salsa

Brown the beef, chicken or turkey in a large skillet, drain and set aside.

Add the bell peppers, and onion to the skillet, saute until the onions are clear

Add the corn, black beans, green chili's and garlic.

Add salt, pepper, chipotle chile powder, and cumin powder to the vegetable mix, simmer for 10 minutes

Add the beef, chicken or turkey to the vegetable mix and simmer another 10 minutes.

Spray a baking sheet with cooking oil and place your tortillas on the sheet

Spoon the filling on to the tortilla

Cover with cheese

Bake at 425 6 to 8 minutes until cheese is melted and tortilla is slightly browned

Remove from oven and place Chalupa on serving plate

Garnish with Lettuce and Tomato Toss and the Mexican Salsa of your choice

Extra Tip

Options

1 can of Corn, drained can be substituted for the Roasted or Fresh Corn

1 can of Black Beans, drained can be substituted for dried cooked Black Beans

We have served this many times as a veggie dish without the meat and it is delicious
