Southern Sweet Potato Pie

Ingredients
1 unbaked 9 inch pie crust
5 medium size sweet potatoes
Yield from roasted sweet potatoes, 3 cups mashed sweet potatoes
1 stick real butter, melted
1 cup sugar
3 tablespoons flour
2 eggs, beaten
3/4 cups evaporated milk
1 teaspoon cinnamon
1/2 teaspoon allspice
Garnish
Whipped Cream
Nuts, chopped
Directions
Wash and dry the sweet potatoes. Place the sweet potatoes on a shallow baking sheet. Roast the potatoes at 425 degrees for 20 to 25 minutes.
Remove the potatoes from the oven, slice the potatoes down the center and cool to room temperature.
Remove the skin from the potatoes and place the meat of the potato into a bowl, set aside.
Do Not Use An Electric Mixer, Stir and Mix This Recipe By Hand
In a large mixing bowl, add the sugar and melted butter. Mix well.
Add the 3 tablespoons flour and mix.
Stir in 2 beaten eggs, cinnamon, allspice and the evaporated milk, mix well.
Stir in the mashed roasted sweet potatoes, mix well.
Pour the pie mixture into the unbaked pie crust.
Bake at 350 degrees for 30 to 45 minutes, until set in the center.
Remove from oven and let cool before slicing.
Garnish with whipped cream and chopped nuts.
