Miz Helen's Kitchen

Ingredients

For Southern Chicken Gravy

8 tablespoons butter

2 cups celery, chopped

1 large onion, chopped

3 cups cooked chicken, chopped

1 teaspoon poultry seasoning

1/2 teaspoon sage

1 teaspoon thyme

1 teaspoon pepper

1 teaspoon salt

1 cup chicken broth

1/2 cup flour

1 cup milk

2 cups frozen green peas

1 cup pimentos, chopped

Directions

In a large heavy skillet, melt the butter and saute the celery and onions until the onions are clear and the celery is tender.

Add the cooked, chopped chicken.

Stir in the poultry seasoning, sage, thyme, pepper and salt, mix well.

Add the broth and cook for 2 minutes.

In a mixing jar with a lid, add the flour and milk.

Shake the flour and milk until it is smooth.

Add the flour and milk mixture to the chicken mixture and stir until the mix begins to thicken.

Add the peas and pimentos, continue to stir and cook until the dish is bubbly.

Keep warm until time to serve.

The Biscuits

I like to serve the chicken gravy on top of my Cheesy Dill Biscuits.

Enjoy!
