Slow Cooker Vegetable Beef Stew

Ingredients

2 pounds beef chuck, cut into small pieces

1 teaspoon salt

1 teaspoon pepper

1/2 cup flour

2 teaspoons olive oil

2 large yellow onions, chopped

4 cloves garlic, minced

4 stalks celery with leaves, chopped

4 medium carrots scrubbed and chopped

3 cups cabbage, shredded

6 medium new red potatoes, skin on quartered

1 teaspoon salt

1 teaspoon pepper

2 teaspoons thyme

1 teaspoon oregano

31/2 cups beef broth

1 (12 ounce) of dark beer or cola

3 cups water to cover the vegetables and beef

2 rosemary sprigs

1 ( 16 ounce) package mixed vegetables (optional)

Directions

Salt and pepper the beef chuck and toss it with the flour.

In a skillet heat the olive oil to hot and sear the beef chuck fast, the remove it to the 6 quart slow cooker.

Layer the following on top of the seared beef chuck.

Layer the onions, celery, carrots, cabbage, potatoes, and seasons.

(Optional) add the frozen mixed vegetables.

Mix all the ingredients very well.

Lay the rosemary sprigs on top of the layers.

Pour the beef broth, dark beer or cola and water around the vegetables and beef.

Place the lid on the slow cooker and cook on low for 7 to 8 hours or on high for 4 to 5 hours.
