Slow Cooker Italian Pot Roast

Ingredients

1 (3 to 4 lbs) boneless chuck roast

2 tablespoons all purpose flour

3 tablespoons olive oil

2 large yellow onions chopped

4 cups baby carrots, cut in half

3 large ribs celery, chopped

2 cups stewed tomatoes

3 cloves garlic, minced

3 tablespoons tomato paste

2 tablespoons dried basil

2 teaspoons dried oregano

2 tablespoons dried parsley

2 teaspoons salt

2 teaspoons pepper

1/2 teaspoon red pepper flakes

2 cups apple cider or apple juice

Directions

Wash and dry the roast, sprinkle the roast with 1 teaspoon salt and 1 teaspoon pepper.

Dust the roast with the flour on all sides.

In a heavy skillet with 2 tablespoons olive oil, heat to very hot.

Sear the seasoned roast in the hot olive oil and then place it in the slow cooker.

In the hot skillet where you seared the roast add 1 more tablespoon olive oil and the carrots, onions, and celery. Stir the vegetables until the onions are starting to turn.

Add the tomatoes, tomato paste, minced garlic, basil, oregano, parsley,pepper flakes, 1 teaspoon salt and 1 teaspoon pepper.

Stir the vegetables and seasons until the vegetables are covered and all the ingredients are blended.

Place the vegetable and season mix on top of the roast.

Pour the apple cider or apple juice around the edge of the roast.

Cover the slow cooker and cook on high for 4 to 5 hours or on low for 8 hours.
