Sheet Pan Roasted Squash

Ingredients

For The Marinate

4 tablespoons olive oil

4 tablespoons balsamic vinegar

1 tablespoon honey

2 tablespoons whole grain mustard

1 clove garlic, minced

2 teaspoons seasoned salt

1 teaspoon black pepper

1 tablespoon thyme

The Vegetables

1 acorn squash, sliced

3 to 4 medium zucchini,sliced

2 large red onion, cut in wedges

Directions

In a mixing jar, place the olive oil, vinegar, honey, mustard,garlic, thyme, seasoned salt, and black pepper. Place the lid on the jar and shake until creamy.

Place the sliced acorn squash, zucchini, and onions into a very large mixing bowl.

Pour the marinate over the vegetable's and mix well. Cover the bowl and let stand for at least one hour at room temperature.

Place parchment paper on a large sheet pan, then place the marinated vegetables on top of the paper.

Place the sheet pan into a 400 degree oven and roast the vegetables for 25 to 30 minutes until tender.
