Sausage-Potato Brunch Casserole

Serves 10 to 12

Ingredients

1(pound) hot ground pork sausage

1(pound) regular ground pork sausage

2 tablespoons olive oil

1 medium onion, chopped

1 green bell pepper, chopped

1 (30 ounce) bag frozen cubed potatoes

2 cups sharp cheddar cheese, shredded

1 teaspoon salt

1 teaspoon pepper

6 large eggs

1 cup half and half

Cooking Spray

Fresh parsley for garnish

Directions

In a large, cook the hot and regular sausage until browned and crumbled, then set aside.

In a separate skillet cook the onions, bell pepper and cubed potatoes until the onions are clear and the potatoes are tender.

Place the cooked sausage and the potato mixture into a very large mixing bowl and mix well.

Mix the cheese into the sausage and potato mixture.

With cooking spray, spray a 9X13 baking dish.

Pour the sausage and potato mixture into the sprayed baking dish.

In a mixing pitcher, mix the eggs, salt,pepper plus half and half.

Pour the egg mixture over the sausage and potato mixture, careful to pour in all over the top of the casserole.

Bake in a 350 degree oven for 30 minutes.

Let set for 10 minutes before serving.
