Rosemary Prime Rib Roast

Serves 8

5 pound Standing Rib Roast, tied

For The Rub

2 tablespoons fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 tablespoon garlic powder

2 1/2 tablespoons salt

2 tablespoons pepper

1 1/2 tablespoons paprika

3 tablespoons olive oil

Directions

In a small bowl mix the rosemary, thyme, garlic powder, salt, pepper, and paprika.

Rub the olive oil all over the washed and dried roast

Rub the mixture all over the roast and wrap with clear plastic wrap

Refrigerate for 12 to 14 hours

Remove the plastic wrap and let the roast stand at room temperature for at least 1 hour

Place the roast fat side up on a roasting rack

Roast at 450 degrees for 15 minutes or until the internal meat thermometer reads 130 degrees

Reduce heat to 350 degrees and roast for 1 1/2 hours to 2 hours for medium rare

Remove the roast to a resting and carving board, cover and let rest for 15 to 20 minutes before carving
