Rosemary Lemon Chicken Burgers With Cranberry Sauce and Garlic Aioli

Ingredients

The Chicken Burger

1 3/4 pound ground chicken

1/4 cup olive oil mayonnaise

1/4 cup ground flax

Juice of half lemon

Zest of one lemon

1 teaspoon salt

3/4 teaspoon rosemary

3/4 teaspoon thyme

For Garlic Aioli

1/2 cup olive oil mayonnaise

juice of half a lemon

1 garlic clove, pressed

For The Burgers

1 can whole cranberry sauce

2 cups baby spinach or salad greens

8 hamburger buns

Directions

Combine the ground chicken and remaining ingredients in a large bowl and mix until well combined.

Lightly grease a large indoor grill with cooking spray. Scoop the chicken mixture into mounds using a 1/4 cup measuring cup onto the griddle, spacing evenly. Lightly flatten the mounds with the back of a spoon to form patties.

Cook for 4 minutes on each side turning carefully.

In a small bowl, combine the 1/2 cup mayonnaise with the juice of half a lemon and one clove pressed garlic.

Spread onto toasted buns, top with cranberry sauce, and a chicken patty, and greens of your choice.
