Rosemary Crusted Peach Cobbler

Ingredients

Peach Mix

2 to 3 cups sliced peeled sliced peaches

1 cup sugar

1 teaspoon cinnamon

1 teaspoon nutmeg

3 tablespoons corn starch

3/4 cup water

Cobbler

1 cup sugar

1 cup flour

1-1/2 teaspoons baking powder

3 tablespoons fresh rosemary, chopped fine

1 cup milk

1/2 cup melted butter

Directions

Place the peaches, sugar, cinnamon and nutmeg in a medium sauce pan and heat the mixture until it is very hot, do not boil or it will break the peaches.

Dissolve the cornstarch in the water and add it to the peach mix stirring constantly until the mixture thickens.

In a medium bowl mix the sugar, flour, baking powder, and rosemary for the cobbler.

Add 1 cup of milk and stir until completely blended and there are no lumps.

Melt the butter and pour into a large iron skillet or a 9X13 baking dish.

Pour the batter mixture onto of the melted butter.

Drop the peach mixture on top of the batter, do not stir.

Bake in a 350 degree oven for 30 to 45 minutes, until slightly brown on top.
