Roasted Turkey

Ingredients

This recipe is for a 15 to 20 pound turkey

3 ribs of celery with leaves, chopped

1 large yellow onion, quartered

1 navel orange, peeled and quartered

1 sprig of fresh sage

1 spring of fresh thyme

2 teaspoons salt

2 teaspoon white pepper

2 sticks real butter, very soft

1/4 cup olive oil

Directions

Wash the turkey inside and out.

Pat the turkey dry on the outside.

Rub the turkey all over with the soft butter, including the inside.

Sprinkle 1 teaspoon of the salt and pepper inside the turkey.

Insert the celery, onion, orange, sage and thyme inside the cavity of the turkey.

Drizzle the olive oil over the top of the turkey making sure it is all covered, then use your hands to smooth it all out and it will blend with the butter.

Sprinkle the remaining salt and pepper on the top of the turkey.

Place the turkey on a roasting rack in a roasting pan.

Do Not cover, roast in the oven at 325 degrees, for this 15 to 20 pound turkey will be cooked un-stuffed for 31/2 to 4 hours.

Baste the turkey every 30 minutes.

If your turkey is getting to brown, then tent it with foil for the last hour of the roasting time.

The turkey is done when you insert a meat thermometer into the thigh and it is 180 degrees or into the breast the temperature should be 165 degrees.

Remove the turkey from the oven.

Remove the vegetables and fruit from the cavity.

I let the turkey rest for 20 to 25 minutes before carving.
