Retro Salmon Patties

Ingredients

1 (15 ounce) can Pink Salmon

2 eggs

1 small onion, chopped small

3/4 cup bread crumbs

1 teaspoon salt

1 teaspoon pepper

1/2 teaspoon cayenne pepper

1 teaspoon Worcestershire Sauce

1 cup flour

1/2 cup vegetable oil

Fresh parsley, for garnish

1 lemon, for garnish juice

Directions

Drain the liquid from the Salmon.

Pick the bones and skin from the Salmon, if desired.

Put the Salmon into a medium mixing bowl and flake it with a fork.

After the Salmon is completely flaked, add the eggs, chopped onion, 1/2 teaspoon salt, 1/2 teaspoon pepper, and 1 teaspoon Worcestershire Sauce, then mix well.

Next add the bread crumbs and form the patties. You should be able to get 6 or 7 patties from the mix.

Mix the flour with the remainder of the seasons.

Roll each patty in the flour and season mix.

Heat the vegetable oil in a heavy skillet.

Fry the patties on medium heat until browned on both sides.

Remove from the skillet and drain on paper towel.

Squeeze the juice from the lemon over the patties and garnish with fresh parsley.
