Red Velvet Pie

Ingredients

1 9 inch pie crust

1 cup semisweet chocolate chips

1 1/2 cups sugar

1/2 cup cocoa powder

1/4 teaspoon baking powder

8 tablespoons butter, melted

4 eggs

1 teaspoon raspberry extract

1 - 1 ounce bottle of red food coloring (see Recipe Tip)

8 ounce cream cheese, softened

Directions

Prepare the pie crust.

Very carefully sprinkle the chocolate chips on the bottom of the pie crust. and set aside.

Melt the butter and set aside.

In a medium bowl, mix together 3/4 cup of the sugar, baking powder, cocoa, 3 of the eggs, extract, and melted butter.Add in the food coloring and whisk together until the mixture is smooth.

Pour the chocolate mixture over the chocolate chips in the pie crust.

In a medium bowl, mix together 3/4 cup of the sugar, 1 egg, and the cream cheese. Beat together until completely smooth and creamy.

A large spoonful at a time place the cream cheese mixture on top of the chocolate mixture in the pie crust.

With the tip of a knife, swirl the cheese mixture with the chocolate mixture, careful to leave the large area's in tack.

In a preheated 275 degree oven, bake the pie for 1 hour.

Turn the oven off and let cool in the oven for 1 hour.

Remove the pie from the oven and refrigerate the pie for at least one hour before slicing.

Keep the pie refrigerated until serving.

Recipe Tip

If you can't use Red Food Dye's because of allergies, use 1 ounce of beet juice.

Be sure to leave the pie in the oven to cool as that is part of the cooking process.

Be sure and refrigerate the pie for at least one hour before serving to allow it to set.
