Ranch House Casserole

1 pound ground lean hamburger, or turkey, or chicken: browned in a large skillet

1 onion chopped

3 garlic pods minced

1/2 cup Green Bell Pepper Chopped

1/2 cup Red Bell Pepper Chopped

1 1/2 cup Green Chili chopped

1 1/2 cup tomato diced with juice

2 cups Green Chili Enchilada Sauce

2 cups Sour Cream

1 3/4 cup or 1 can cream of mushroom soup

1 cup roasted corn

1 cup cooked black beans

2 cups cooked rice

1 teaspoon salt

1 teaspoon pepper

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon cilantro

1/2 teaspoon red pepper flakes

Fresh Cilantro for Garnish

8 Corn Tortilla's for the layer

4 Corn Tortilla's for Baking chips

1 cup longhorn or cheddar cheese shredded

Directions

Bake 4 Corn Tortilla's on a cookie sheet at 425 degrees for 10 minutes until brown and set aside to cool.

Season the meat with the salt, pepper, chili powder,cumin,cilantro and red pepper flakes.

Brown the seasoned meat in a very large skillet.

Add the onion, garlic,green chili,and diced tomatoes plus juice mix and simmer until the onion is clear

Add the rice and mix well and simmer for 5 minutes

Add the corn, black beans and bell peppers, mix well and simmer for 5 minutes

Mix the Sour Cream, Mushroom Soup, and Green Chili Enchilada Sauce togetherl

Pour over the meat mixture and simmer for 10 minutes.

Taste your meat mixture and make sure that your seasons are right, you may want to add more salt.

In a lightly greased 9X13 baking dish, layer 4 tortilla's

Add a layer of the meat mixture on top of the tortilla's

Next add 4 more tortillas on top of the meat mixture

Next add another layer of the meat mixture on top of the tortilla's

Bake at 350 degrees for 25 minutes uncovered take out of the oven and

Top with the crushed tortilla's and shredded cheese mix

Return to the oven and bake at 350 degrees for 10 to 15 more minutes until cheese is melted.

Garnish with fresh chopped Cilantro

Recipe Tip:

I keep cooked rice in 2 cup bags in my freezer to use in casseroles or other dishes. It is a big time and energy saver.
