Pressure Cooker Southern Split Pea and Ham Soup

Serves 8

Ingredients

1 tablespoon butter

1 tablespoon olive oil

2 cups onions, chopped

5 ribs celery, diced

1 pound (2-1/2 cups) green split peas

1 pound or 3 cups cooked ham, chopped in bite size

2 bay leaves

2 teaspoons salt

1 teaspoon dried thyme leaves

1/8 teaspoon cayenne pepper (to taste)

3 cups water

Sour Cream for garnish

Directions

Pick over and rinse the peas.

In the pressure pan, heat the butter and oil.

Add the onions, and celery then stir.

Add the peas. ham, bay leaves, salt,cayenne pepper and thyme leaves.

Add the water and stir well.

Place the lid on the pressure pan.

Bring the pressure to 15 pounds pressure and cook for 10 minutes.

Turn the heat off.

Allow the pressure to come down naturally.

After the pressure is completely down, remove the lid.

Let the soup sit for a few minutes before serving, the longer it sits the thicker it will be. Stir well from the bottom before serving. Adjust the seasons to taste.

Garnish with sour cream.
