Crunchy Peanut Butter Ice Cream Sandwich Bites

Ingredients

Makes 60 Cookies

1/2 cup dark brown sugar

1/2 cup white sugar

1 stick butter

1 egg

1 cup Crunchy Peanut Butter

1/2 teaspoon salt

1/2 teaspoon soda

1 1/2 cups sifted flour

1 cup oatmeal

1/2 teaspoon vanilla

1 tablespoon Vanilla Ice Cream for each sandwich bite

Directions

Cream sugars and butter. Beat in egg, peanut butter, salt, and soda. Blend in flour. Add vanilla. Stir in the Oats.

Using a one tablespoon scoop to place the cookies on the un-greased cookie sheet.

Flatten with a fork making a criss cross pattern, dip the fork in flour so it doesn't get sticky.

Bake at 350 degrees for 13 minutes until lightly brown.

Remove the cookies to a cooling rack and let the cookies cool until they are very cool.

Using vanilla ice cream of your choice, with a tablespoon scoop place a scoop on the bottom of each cookie and top with another cookie.

Place all the sandwich bites on a cookie sheet lined with wax paper and put in the freezer until ready to serve.
