Ingredients For Fried Crappie

12 medium size Crappie Filet's

1 cup buttermilk

1 cup yellow corn meal

1/3 cup all purpose flour

1 teaspoon baking soda

1 teaspoon salt

1 teaspoon pepper

1 teaspoon garlic powder

1/8 teaspoon cayenne pepper

1 1/2 cup's vegetable oil

Directions

Place the cleaned Crappie Filet's in a baking dish and pour the buttermilk over the filet's. Make sure that each one of the filet's are covered well. Cover the dish and place in the refrigerator for at least 2 hours.

In a shallow plate, mix the cornmeal, flour, baking soda, salt, pepper, garlic powder, and cayenne. Mix all these dry ingredients well.

Remove the filet's from the refrigerator.

Dredge the marinated filet's in the cornmeal mixture.

In a heavy skillet, (I use my iron skillet) pour the vegetable oil into the skillet. Heat the oil to 350 degrees.

Be sure that your skillet is deep enough so that when you put the fish in it won't go over and make a fire.

Just fry a few filet's at a time and that will help to keep it from going over.

Fry about 2 minutes on each side, until golden brown on both sides.

Remove and place on a paper towel to drain. You will be surprised because this is not oily at all.

We serve this with a wedge of lemon and dig in.
