Orange Cornmeal Cake

Ingredients

1-1/4 cups all-purpose flour

3/4 cup sweetened shredded coconut

3/4 cup yellow cornmeal

1-1/4 teaspoon baking powder

1/4 teaspoon baking soda

1 teaspoon salt

2/3 cup olive oil plus 2 tablespoons

3 large eggs, room temperature

1-1/2 cups sugar

2 tablespoons Cuties Orange Zest

1/2 cup Cuties Orange juice

1 teaspoon vanilla extract

Directions

Cut a round of parchment paper for the bottom of the 9 inch spring form pan.

Brush the spring form pan with some of the 2 tablespoons olive oil, making sure that the sides and the bottom of completely covered.

Place the round of parchment paper on the bottom of the oiled pan, then brush the top of the parchment paper with the oil, then set aside.

In a large mixing bowl whisk together the flour, shredded coconut, cornmeal, baking powder ,baking soda and salt. Make sure this mixture is completely blended together.

In a medium mixing bowl, mix the eggs, sugar, orange zest, orange juice and vanilla extract.

Slowly add the egg mixture to the flour mixture and stir until completely blended. Stir together until smooth.

Pour the batter into the prepared spring form pan.

Smooth the top of the batter and sprinkle the 1/2 cup sugar over the top of the cake.

Bake in a pre-heated 350 degree oven for 30 to 40 minutes or until the center will test clean.

Remove from the oven and cool on a rack until room temperature.

After the cake is completely cooled, remove the cake from the pan and place on a serving plate.

Garnish with orange peel and mint.

We are serving our cake with our special whipped cream and macerated strawberries.

Recipe Tip

For the special whipped cream, add 1 tablespoon orange zest to 1 cup of whipping cream and 4 tablespoons powdered sugar. Whip the cream until soft peaks appear.

To Macerate the strawberries, cut the strawberries in quarters and place in a bowl, sprinkle enough sugar over the berries to cover them well. Place a cover on the bowl and let stand at room temperature for several hours. Remove the cover and stir the berries, there will be lots of great juice and flavor.
