Old Fashioned Fried Chicken

Ingredients

1 Fryer Chicken, cut up

3 cups Buttermilk

4 teaspoons salt

2 teaspoons pepper

1 teaspoon papakria

1/2 teaspoon cayenne pepper

2 1/2 to 3 cups all purpose flour

Vegetable Oil

Directions

Wash and dry the Chicken

Mix the Buttermilk with 2 teaspoons salt and 1 teaspoon pepper

Place the chicken in a long container and pour the Buttermilk Mix over the Chicken, making sure that the chicken is covered on all sides with the Buttermilk Mix then cover and refrigerate for at least 4 to 6 hours

In a medium bowl mix the flour, 2 teaspoons salt, 1 teaspoon pepper, 1 teaspoon papakria, and cayenne

Pour the flour mixture into a large paper bag

Place 2 pieces of chicken in the bag at a time, close the bag and shake the bag until the chicken is coated, remove the coated chicken to a platter, repeat this process until all the chicken is coated

Pour enough Vegetable Oil into a hot heavy large deep skillet to cover the bottom of the skillet with 3/4 inch of oil

Place the chicken coated chicken pieces into the hot oil making sure not to get the skillet to full or the hot oil will boil over and cause a fire, be careful.

Turn the chicken frequently and cook until the chicken is golden brown and cooked completely through, between 15 to 20 minutes, depending on the heat of your oil

Remove the chicken to a platter with paper towels or a brown paper bag and drain the chicken

Place the drained chicken on a serving platter and keep warm in the oven until ready to serve
