Old Fashioned Carrot Cake

Ingredients

2-1/2 cups all purpose flour

1-1/4 teaspoon baking powder

1 teaspoon baking soda

1-1/2 teaspoons cinnamon

3/4 teaspoon ground nutmeg

1/4 teaspoon ground cloves

1/2 teaspoon salt

3 cups carrots, grated

1 cup raisins

2 cups pecans, chopped

1-1/2 cups granulated sugar

1/2 cup brown sugar

4 eggs

1-1/2 cups vegetable oil

Baking Oil Spray For Baking Dish

Frosting

8 (ounces) cream cheese, softened

5 tablespoons unsalted butter, room temperature

1 tablespoon sour cream

1 teaspoon vanilla extract

1-1/2 cups confectioners sugar

Directions

Mix the flour, baking powder, baking soda, cinnamon, nutmeg, cloves and salt in a bowl and set aside.

In an electric mixer bowl, beat the granulated sugar and the brown sugar to mix, then add the eggs one at a time, mixing between the additions.

With the mixer running, slowly add the vegetable oil until fully incorporated.

Increase the speed and beat until the color is light and creamy.

Stir in the carrots, raisins and 1-1/2 cups pecans and mix well.

Stir in the dry ingredients and mix well.

With a Baking Spray Oil, spray a 9 X 13 baking dish.

Pour the batter into the prepared baking dish and bake at 350 degrees for 30 to 40 minutes, or until the center of the cake will test clean.

Remove the cake to a cooling rack and let cool to room temperature before frosting.

The Frosting

In a mixer bowl, mix the cream cheese, butter, sour cream, and vanilla until very smooth. Add the confectioners sugar and mix until fluffy.

Frost the cake, then garnish the top with the remaining chopped pecans.
