Mediterranean Chicken Skillet

Ingredients

5 to 6 chicken breast, skinless and boneless

2 teaspoons salt

1 teaspoon black pepper

1 teaspoon garlic powder

4 tablespoons olive oil

1 onion, chopped

6 garlic cloves, minced

1 (28 ounce) can diced tomatoes with the juice

1 cup green olives

1 cup black olives

1/2 cup capers

1 tablespoon Italian seasoning mix

fresh parsley for garnish

Directions

Mix together the salt, black pepper, and garlic powder.

Sprinkle the salt mix over the washed and dried chicken. Set aside.

Heat the olive oil in a very heavy skillet.

Place the chicken into the hot olive oil and on medium heat sear the chicken on both sides until it is beginning to brown.

Remove the chicken to a holding platter.

With the skillet on medium heat, add the onion, and cook until clear.

Add the garlic and stir well with the onions.

Add the tomatoes, olives, capers and Italian seasoning mix.

Bring the mix to a boil, then add the chicken back to the skillet.

Make sure that some of the tomato mix is over all the chicken.

Reduce the heat to low and cover the pan.

Cook the chicken until completely done.

Remove from the heat and keep covered until ready to serve.

Garnish with fresh parsley.
