Instant Pot Waldorf Chicken Salad

For The Instant Pot Chicken

2 large chicken breast, bone in and skin on

1 teaspoon salt

1 teaspoon pepper

2 tablespoons oil

1 onion chopped

1 cup baby carrots

2 stalks celery, large chop

1 cup chicken broth


Salt and pepper the chicken.

Select saute on the instant pot and adjust to normal.

Add the oil and when the oil is hot add the chicken breast one at a time to brown on both sides. Remove to a plate while you brown the next chicken breast.

Press Cancel

Place the chicken breast back into the instant pot.

Add the onion, carrots, celery and broth.

Secure the lid to the pot and close the pressure -release valve.

Select poultry, when the cooking is complete, use a quick release to depressurize.

Press cancel.

Remove the chicken from the pot.

For The Salad

Remove the chicken breast bone and skin.

Dice the chicken breast meat.

Add 3 cups of the diced chicken breast to the Waldorf Salad Recipe.

Classic Waldorf Salad

1 red delicious apple, chopped

1 gala apple, chopped

2 cups red seedless grapes, sliced in half

2 cups celery, sliced thin

1 teaspoon lemon juice

1-1/2 cups roasted walnuts, large chop

Sauce For The Waldorf Chicken Salad

1 cup mayonnaise or Miracle Whip

1 cup yogurt

2 teaspoon poultry seasoning

1 teaspoon thyme

1 teaspoon lemon juice

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon sugar


In a mixing pitcher, whisk together the mayonnaise or Miracle Whip,yogurt, lemon juice, salt, pepper, poultry seasoning, thyme, and sugar. Mix well, refrigerate until needed.

In a large mixing bowl toss together the apples, grapes and celery. Drizzle 1 teaspoon lemon juice over the fruit and toss.

In a heavy skillet, toast the walnuts until just starting to brown.

Pour the chilled sauce over the fruit and toss together. Add the diced Chicken and stir well. Add the walnuts just before serving.
