Herb White Bean Soup

Ingredients

1 pound Great Northern White Beans

1 teaspoon fresh rosemary, chopped

1 sprig fresh rosemary

1 teaspoon fresh thyme, chopped

1 sprig thyme

1 teaspoon parsley

1 teaspoon salt

1 teaspoon pepper

1/8 teaspoon cayenne pepper

Optional 1 ham bone

Directions

Rinse and sort beans in a large pot.

To 1 pounds of beans add 8 cups hot water. Bring to a rapid boil, and boil for 2 minutes.

Remove from heat

Cover and let stand 1 hour, drain and rinse beans

Pour the drained and rinsed beans back into the pot

Add the chopped rosemary, thyme, parsley, salt, pepper, cayenne pepper and mix well.

Add 6 cups of water and stir

If you are adding a ham bone, add it now

Last add a sprig of rosemary and thyme on top of the mix

Bring to boil and cover, reduce the heat to low and cook for 1 1/2 hours or until the beans are tender.

Garnish with Sour Cream and fresh herbs
