Grandmothers Pumpkin Pie

This is my Grandmothers recipe and I have tried to leave most of the original wording, but updating it for our modern kitchens.

Ingredients

For The Crust

1-1/2 cups (all-purpose) flour

1/2 teaspoon (dash) salt

1/4 cup (lard) solid vegetable shortening

1/4 cup butter

1/3 cup or less cold well water (ice water)

Directions

Sift dry ingredients together and work in chilled shortening and butter lightly.

Add ice water slowly and roll on floured board. Chill the dough if needed.

Line pie tin with the dough, have dough well over edge of pan.

Ingredients Pie Filling

2 cups pumpkin, roasted and mashed, (pumpkin puree)

2/3 cup sugar

1 teaspoon salt

1 teaspoon cinnamon

1/2 teaspoon ginger

1/3 teaspoon nutmeg

2 tablespoons molasses

3 eggs

2 cups whole milk

3 tablespoons butter, melted

1 egg white

Directions

To the mashed pumpkin, add sugar,salt and spices.

Add eggs slightly beaten, milk, and melted butter.

Mix thoroughly.

Line pie tin with chilled pastry, brush with unbeaten white of egg.

Bake the shell in the oven (at 425 degrees) for 10 minutes.

Pour in the pumpkin mixture and bake (at 350 degrees) for 30 to 40 minutes until the center is set.

Cool in the pie safe (at room temperature) for 2 to 3 hours or until set before slicing.

Garnish with Whipped Cream
