Glazed Donut Muffins

Ingredients

2-3/4 all purpose flour

1 cup sugar

1/4 cup corn starch

1 tablespoon baking powder

1 teaspoon salt

1/2 teaspoon ground nutmeg

1 cup buttermilk

8 tablespoons butter, melted

2 large eggs

1 egg yolk

Glaze

2 cups confection sugar, sifted

1/4 cup milk

1 teaspoon extract flavor of your choice

Directions

For The Muffins

Sift into a large mixing bowl, flour, sugar, cornstarch, baking powder, salt and nutmeg.

Stir together, buttermilk, eggs and egg yolk, plus melted butter, mix well.

Using a spatula mix the dry ingredients with the wet ingredients until blended, don't over mix.

With a cooking oil spray, spray a 12 cup muffin tin.

Scoop the batter into the prepared muffin tin.

Adjust the oven rack to middle position and bake the muffins in a preheated 400 degree oven for 19 to 24 minutes, until golden brown on top. Check the center with a toothpick to make sure it comes out clean.

Remove from oven and cool on a cooling rack until room temperature.

For The Glaze

In a medium, mix the sifted sugar with the milk and 1 teaspoon extract, until completely smooth.

For Different colors:

For different colors add 1 tablespoon of the glaze for each muffin to a small bowl, then add the color and mix until you have the desired color.

I did not use the extract in the large mix but rather flavored the different colors with just a drop of extract in each mix.

For the Lavender, I used a Lavender Essential Oil.

For The Yellow, I used a Lemon Essential Oil.

For The Green, I used a Mint Essential Oil.

For The Pink, I used a Raspberry Extract.
