Garlic Butter Cod With Caper Sauce

Ingredients

2 (6 ounce) frozen or fresh Cod Fillets

2/3 cup all-purpose flour

1-1/2 teaspoon salt

1 teaspoon pepper

1 teaspoon dried thyme

2 tablespoons olive oil

4 tablespoons butter

4 teaspoons minced garlic

4 tablespoons capers

Juice from 1 lemon

Sliced lemon for garnish

Directions

Prepare the dredge by stirring together the flour, salt, pepper and thyme in a shallow dish.

If your cod is frozen, thaw it out.

With a paper towel dry the cod fillets

Place each fillet into the dredge and make sure the flour mixture is on all sides of the cod, then dust off the excess flour. Set aside.

Heat the olive oil, butter, and minced garlic, in a non stick skillet over medium heat.

Very carefully place the cod fillets in the skillet.

Cook the fillets on medium heat about 2 to 3 minutes on each side.

Remove the fish to a warm holding platter.

Add the capers and lemon juice to the butter and olive oil left in the skillet, simmer for about 2 minutes then pour over the fish.

Plate and enjoy!
