Creamy Cilantro Lime Chicken

Ingredients

4 skinless chicken breast,sliced in half length wise

2 teaspoons salt

2 teaspoons pepper

1/2 teaspoon cayenne pepper

2 tablespoons vegetable oil

1 medium size onion, chopped

3 garlic cloves, minced

1 cup chicken broth

4 tablespoon lime juice

5 tablespoons butter

1/2 cup heavy cream

3 tablespoons fresh cilantro, chopped plus more for garnish

Directions

Slice the chicken breast in half to help cook the chicken so it is not so thick.

Mix the salt, pepper,and cayenne together, then sprinkle the seasons all over the chicken covering all sides.

In a large heavy skillet heat the vegetable oil.

Place the chicken into the hot oil and brown the chicken, then remove it to a holding platter.

Next saute the onions and garlic in the hot skillet.

When the onions are clear add the chicken broth and lime juice, cook on medium for 5 minutes.

Add the butter and when it is melted, add the heavy cream and fresh cilantro.

Stir until the sauce is creamy and thick.

Place the browned chicken into a 9 X 13 baking dish and then pour the sauce over the chicken.

Bake at 350 degrees for 30 to 45 minutes until the sauce is bubbling and the chicken is cooked through.

Garnish with fresh cilantro. Serve with fresh lime wedges.

Serve the sauce on the chicken and on the side.
