Collards and Mustard Greens Salad with Bacon Vinaigrette

Ingredients

The Salad

4 to 6 Fresh Young Collard Greens, rolled and sliced

6 cups Mustard Greens, Chopped

1 Gala Apple, chopped

1 Red Asian Pear, chopped

1 cup Mandarin Oranges, drained

1 cup glazed walnuts,chopped

1/2 cup Feta, crumbled

Bacon Vinaigrette

Ingredients

4 slices bacon

1/4 cup Olive Oil

1/4 cup apple cider vinegar

6 tablespoons maple syrup

1 teaspoon Dijon Mustard

Dash Tabasco (to taste)

Directions

Wash and dry the Collards and Mustard Greens.

Remove the stems from the greens.

Roll the Collards and slice.

Wash dry and slice the apple and pear.

Chop the bacon into bite size pieces.

On a large platter or plate layer the chopped Mustard Greens, then arrange the fruit, walnuts, and collard rolls.

In a hot skillet cook the bacon pieces until crisp. Remove the bacon to a paper towel to drain.

To the bacon fat in the skillet add the olive oil, vinegar, maple syrup, Dijon and Tabasco. Bring that mix to a boil then while the mix is very hot pour the vinaigrette over the salad. Sprinkle the Feta and bacon pieces on top.

Serve immediately.
