Chicken and Veggie Cobbler

Ingredients
For The Veggie's and Chicken
3 cups cooked chicken, chopped
3 tablespoons butter
16 ounces white mushrooms, chopped in quarters
2 cups green peas
1 medium onion, chopped
1 cup carrots, sliced
3 cloves garlic, minced
1/3 cup flour
1/2 cup white wine or beer ( option for non alcohol use 1/2 cup grape juice)
1 cup half and half
1 tablespoon white wine vinegar
3 tablespoons parsley
2 teaspoons rosemary
2 teaspoons thyme leaves, chopped
3 tablespoons chives, chopped
1 teaspoon salt
1 teaspoon pepper
1/8 teaspoon cayenne
2 1/2 to 3 cups chicken broth
For The Biscuit
2 1/2 cups self rising flour
1/2 teaspoon sugar
1 1/2 cups buttermilk
1/2 cup butter, melted
1/2 cup crisp bacon, chopped
Directions
For The Chicken and Veggie Mix
In a heavy dutch pot, melt the butter over medium heat, then add the onions and garlic, and carrots. Saute until the onions are clear and the carrots are tender.
Add the mushrooms, peas and the wine, beer or grape juice, cook for 5 minutes.
Add the flour stir well and cook for 3 minutes, stirring constantly so is doesn't stick or scorch.
Slowly add the broth and stir constantly until thick.
Add the half and half and the vinegar.
If you think it is to thick add more broth or half and half a little at a time until is is smooth and creamy.
Add the chicken and add the seasons stir and continue to cook for 5 minutes. Cover the pot and remove it from the burner. Set aside until the biscuit is ready.
The Biscuit
In a medium size mixing bowl, whisk together the flour and sugar. Stir the buttermilk and melted butter together, then stir that mix into the flour and sugar mix. Add the bacon and mix well.
Mix the dough until it pulls away from the sides of the bowl.
Make the Cobbler
Pour the Chicken and Veggie mix into a buttered 9X13 baking dish.
With a 1/4 cup measure, put 1/4 cup of the biscuit dough on top of the Chicken and Veggie Mix, leaving space for the biscuit to rise.
Bake in a 400 degree oven for 30 to 35 minutes until the cobbler is browned and bubbly.
