Ingredients

For The Cake

2 1/2 cups cake flour, sifted

1 1/2 cups sugar

3 1/2 teaspoons baking powder

1 teaspoon salt

1/2 cup shortening,(vegetable shortening)

3/4 cup milk

1 teaspoon vanilla

2 teaspoons almond extract

1/4 cup Maraschino Cherry Juice

4 egg whites unbeaten

18 Maraschino Cherries, drained and finely chopped

Maraschino Cherries for garnish if desired

Directions

For The Cake

Sift together the flour, sugar, baking powder and salt into a large mixing bowl.

Add the shortening to the dry mix and beat on slow to blend about 1 minute.

Mix the milk, vanilla, almond extract and cherry juice.

Add 3/4 of the milk mixture (reserve 1/4 of the liquid) to the dry ingredients and mix on low for 2 minutes.

Add 4 egg whites to the reserved liquid mixture of milk and flavors then add that mixture to the cake batter and mix on low for 2 minutes.

Stir in the chopped cherries.

Pour into greased and floured two 9 inch cake tin's and bake at 350 degrees for 25 to 30 minutes until just browned on top and done in the center.

Let cool before frosting.
