Butternut-Pear Crisp

Ingredients

The Filling

3 cups fresh butternut, chopped in 1" cubes

1/4 cup maple syrup

1/2 cup dried cranberries

2 tablespoons lemon juice

1/2 cup dark brown sugar

2 teaspoons cinnamon

1 teaspoon all spice

1/2 teaspoon nutmeg

1 cup water

3 large pears, peeled, cored, and chopped in 1" cubes

2 teaspoons vanilla

The Crumble

1/2 cup flour

1/2 cup brown sugar

1/2 cup butter, cold, cut in small cubes

1 teaspoon cinnamon

1 cup pecans, chopped

1/2 cup oats

Directions

Place the chopped butternut cubes in a heavy sauce pan with 1 cup water.

Add the maple syrup, cranberries, lemon juice, brown sugar, cinnamon, all spice, and nutmeg. Cook on medium until the butternut is just tender.

Add the pears and vanilla, mix well, then cook until the pears are tender. Set aside.

In a food processor, add the flour brown sugar,cinnamon and butter.

Pulse the processor until the mixture is blended.

Remove from the processor and mix the pecans and oats into the mix.

Butter the bottom of a 8X11 baking dish, then sprinkle 1/2 of the crumble mixture on top of the butter bottom.

Pour all of the filling over the bottom crumble, reserving the remainder of the syrup for garnish.

Top with the remainder of the crumble.

Bake at 375 degrees for 30 minutes.

Garnish with Ice Cream and the remaining syrup.
